  • Enchiladas Sante Fe

    Ingredients

    • 1 1/4 c. H.C. Shredded Cheddar cheese divided (5 ounce. )
    • 1 c. cooked chicken breast shredded
    • 1 c. frzn minced broccoli thawed/liquid removed
    • 10 ounce enchilada sauce divided
    • 1/2 c. nonfat lowfat sour cream divided
    • 1 x 4 oz can minced green chiles liquid removed
    • 1 tsp chili pwdr (1 to 2)
    • 1 Tbsp. chopped cilantro (optional)
    • 8 x corn tortillas (6 inch)
    • 1 c. shredded lettuce
    • 1/2 c. diced tomatoes

    Directions

    1. Mix together 1 c. cheese, chicken, broccoli, 1/4 c. enchilada sauce, 1/4 c. lowfat sour cream, chiles, chili pwdr and cilantro. Place tortillas on Microwave-save plate; cover with plastic wrap. Microwave on High 1 minute.
    2. Place 1/4 c. cheese mix down center of each tortilla; roll up. Place seam side down, in 10x6" baking dish. Cover with remaining enchilada sauce.
    3. Cover with plastic wrap, venting corner. Microwave on High 7-8 min or possibly till warm. Remove from oven; sprinkle with remaining cheese. Cover and let stand 2 min. Serve with lettuce, tomatoes and remaining lowfat sour cream.
    4. Serves 8.
    5. NOTES :This recipe is for the Low fat Healthy Choice cheese which was introduced in the Spring of 1998, so the calories and fat amounts are listed are using which kind of cheese.
