Enchiladas De Papas (Potato Enchiladas)
Ingredients
- 2 x Baked potatoes
- 1 Tbsp. Corn oil
- 1 sm Onion, chopped
- 1/2 tsp Salt
- 1/4 tsp Grnd cimin
- 1 tsp Chili pwdr
- 1/4 c. Chicken stock
- 1 lrg Tomato, peeled, diced
- 1/2 c. Cheddar cheese, grated
Directions
- If you do not have any tortillas and feel like eating an enchilada, this is it. Slit tops of potatoes and remove pulp. Mash; cover and set aside. Keep shells hot. Heat oil in skillet. Add in onion, cook till clear and soft, 10 mins. Add in salt, cumin, chili pwdr, and stock; mix. Add in tomato and mashed potato; mix. Cook over low heat 5 mins. Add in 1/4c cheese; mix, heating thorugh. Heap filling into hot shells. Sprinkle each potato with 2T cheese. Bake 350 F till cheese is melted.
