  • Emmy Award Winning Kevin Mambo's "Sauteed Scallops In Wine

    Ingredients

    • 2 lb Sea scallops
    • 2 Tbsp. Extra virgin olive oil
    • 1/4 Tbsp. Warm pepper flakes
    • 2 x Cloves garlic, finely minced
    • 1 Tbsp. White wine
    • 1 Tbsp. Curry pwdr
    • 1 sm Tomato, peeled seeded and minced
    • 1/4 c. Heavy cream
    • 2 Tbsp. Tabasco sauce Salt and pepper to taste
    • 1 Tbsp. Parsley, finely minced

    Directions

    2. 1. First, pour some extra virgin olive oil into one of the skillets on the range top.
    3. 2. Then, add in the red pepper flakes, garlic and white wine.
    4. 3. Add in all of the sea scallops to the skillet.
    5. 4. Cover the pan and let the scallops cook over med/high heat till the scallops become hard and opaque (2 to 4 minutes.) shaking the pan occasionally.
    6. 5. Remove the pan from the heat and transfer the scallops to a large serving bowl. Set aside, making sure to reserve some of the liquid.
    7. 6. Add in 1 tbsp. oil and the curry pwdr to a small saucepan and cook for 1-2 min.
    8. 7. Add in the reserved scallop liquid to the saucepan of oil and curry by straining 3/4 c. of it through a cheesecloth or possibly a coffee filter.
    9. 8. To the same saucepan, add in the tomato pcs, cream, Tabasco, salt, pepper and parsely, and heat for 2 to 3 min.
    10. 9. Spoon some of the scallops onto a plate and then pour contents of the small saucepan over scallops.
    11. 10. Serve with angel hair pasta, crusty bread, green salad and a lovely white wine.
