Ingredients

  • 1 lb Grnd beef lean
  • 1 c. Minced onion
  • 2 x cloves Garlic minced fine or possibly
  • 1 Tbsp. minced garlic from jar
  • 2 tsp Chili pwdr
  • 1/2 tsp Dry oregano
  • 1/2 tsp salt
  • 1/4 tsp Pepper
  • 1 can Enchilada sauce
  • 2/3 c. Tortilla chips crushed fine
  • 2 c. Cheddar cheese shredded
  • 1 1/4 c. Lowfat milk
  • 3 x Large eggs
  • 3/4 c. Bisquick
  • 1 env taco seasoning
  • 1 x RED bell pepper minced Or possibly 1 jar liquid removed pimientos - minced
  • 1 can Corn liquid removed (can be Mexicorn)

Directions

  1. Heat oven to 400. Grease 10 in pie plate or possibly small casserole. Brown hamburger with onions and drain. Stir in garlic, chili pwdr, oregano, salt, pepper and 1/2 c enchilada sauce, taco seasoning and corn. Sprinkle crushed tortilla chips proportionately in dish. Top with 1 1/2c of cheese; spread with meat mix. Beat lowfat milk, Large eggs and Bisquickuntil smooth, 15 seconds in blender on high. POur onto meat mix. Bake till knife comes out clean, 25-030 minutess. Spread remaining sauce on top and sprinkle with remaining cheese. Bake till cheese is melted 3-5 min longer. Cold 10 mintues before serving and top with lowfat sour cream. Could add in layer of minced tomatillos on top also.
