Emeril's Smashed Potato Salad
Ingredients
- 2 lb new potatoes, minced
- 1/2 c. chopped onions
- 3 x hard-boiled Large eggs, minced
- 1 tsp chopped garlic
- 1 Tbsp. light brown sugar
- 3/4 c. mayonnaise
- 1/4 c. yellow mustard
- 1 dsh Worcestershire sauce
- 1 dsh Tabasco sauce
- 1 x lemon, juiced salt and pepper
Directions
- Place potatoes in saucepan; cover with water. Season the water with salt. Bring to a boil, reduce to simmer; cook potatoes till fork tender, about 8 to 10 min. Remove from heat; drain. Turn potatoes into a mixing bowl.
- Using a hand-held masher, mash potatoes; stir in onions, Large eggs and garlic. Stir in brown sugar, mayonnaise and mustard; mix thoroughly.
- Season salad with Worcestershire sauce, Tabasco sauce, lemon juice, salt and pepper. Cover; chill till chilled.
- Yields 4 servings.
