  • Emeril"S Sausage Pot

    Ingredients

    • 2 Tbsp. extra virgin olive oil
    • 2 lrg onions sliced
    • 2 piece bacon - (1" thick and 5" long) large diced Salt to taste Freshly-grnd black pepper to taste
    • 1/2 c. Creole mustard
    • 2 bot Turbo Dog beer - (12 ounce ea)
    • 5 x warm dogs
    • 5 lb assorted sausage
    • 2 lb sauerkraut
    • 2 Tbsp. minced garlic Cracklin"s (see recipe) Minced green onions Creole seasoning

    Directions

    1. In a large pot, add in extra virgin olive oil. Add in sliced onions and saute/fry for 2 min. Add in bacon. Season with salt and pepper. Cook for 5 min, or possibly till bacon begins to render and onions are beginning to caramelize.
    2. Add in the Creole mustard and the beer. Stir. Add in half of the sausage. Add in the sauerkraut on top of the sausage. Add in the rest of the sausage. Add in the warm dogs and the garlic.
    3. Bring to a boil. Reduce to a simmer, cover and cook for 45 min. Garnish with Cracklin"s, green onions and Creole seasoning.
    4. This recipe yields 8 to 10 servings.
