  • Embarrassingly Easy Mint Bark

    As the name says, it is embarrassingly easy. It takes few ingredients, but it can be totally messed up if improvising and not following recipe. It is delicious. It is the Christmas Candy that the recipients say they like the best.

    Ingredients

    • 1 Plymoth Pantry Almond Bark VANILLA
    • 2 Large RED Peppermint Sticks
    • 3 drops Green Food Coloring (contrast to red peppermint sticks)
    • 1/2 teaspoon of Peppermint Extract

    Directions

    1. Chop bark into sections using sturdy knife with hammer on seams.
    2. Chop Peppermint Sticks using a plastic bag by hammering them into small chunks, or use Cuisinart on pulse, so not to make dust.
    3. Melt Bark in double boiler (makeshift or otherwise), letting it sit in stainless steel bowl w/o too much stiring. Occassionally stir to let heated chocolate melt the rest.
    4. ONLY AFTER BARK MELTS add Green Food Coloring and Peppermint Extract. If you add these before melting chocolate completely, it will seize up and nothing will bring it back for making this candy.
    5. Once melted, pour in Food Coloring and Peppermint and stir. Pour mixture onto plain baking sheet W/O parchment paper or oil, smoothing it out. Let it stand until cooled all the way. (I put it outside to harden in cold weather.)
    6. Pull off Bark from cookie sheet and break into desired pieces. . . . MERRY CHRISTMAS
