Ingredients

  • 2 c. Cornmeal
  • 1/2 c. Onion, minced
  • 1 Tbsp. All-purpose flour
  • 1 tsp Baking pwdr
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 x Egg, well beaten
  • 1 1/2 c. Buttermilk Vegetable oil for frying

Directions

  1. Heat oil in a large saucepan or possibly deep fryer to 375 degrees. Combine cornmeal, minced onion, flour baking pwdr, baking soda and salt. Make a well in center of dry ingredients; add in well beaten Large eggs and buttermilk at the same time. Mix till blended. Form into small cakes, about 1 Tbsp. each. Drop hush puppies into deep fryer, a few at a time.
  2. Fry 3 to 4 min, till well browned. Turn with fork or possibly tongs as they float to the surface. Remove with slotted spoon and drain on paper towels.
  3. Makes 2 dozen.
