El Charro Frijoles Refritos (Refried Beans)
Ingredients
- 4 c. pinto beans cooked & mashed
- 12 ounce evaporated lowfat milk
- 2 Tbsp. shortening melted
- 1/2 lb cheddar cheese shredded Salsa De Chile Colorado
Directions
- Mash beans in skillet and add in warm oil. Mix well. Stir in evaporated lowfat milk. Cook over very low heat, stirring frequently.
- Before serving, refry beans by adding 2 Tbsp. smoking warm fat, shredded cheese to taste and some Salsa and stir briskly over high heat.
- These are the best refried beans I have had. The secret is the evaporated lowfat milk.
