Eggs Benedict With Cheese Sauce

Ingredients

  • 2 x English muffins, halved/buttered
  • 4 slc Canadian bacon, cooked
  • 4 x Swiss, (1 oz) cheese slices
  • 4 x Poached Large eggs
  • 1 Tbsp. Butter or possibly margarine
  • 1 Tbsp. All-purpose flour
  • 2/3 c. Lowfat milk
  • 1/2 c. Shredded Cheddar cheese
  • 1/4 tsp Salt
  • 1 dsh Black pepper

Directions

  1. Broil muffins till lightly browned. Place 1 Canadian bacon sliced nad 1 cheese slice on each mufin half. Top each wit ha poached egg and cover with cheese sauce. Serve immediately.
  2. Yield: 2 servings.
  3. Cheese Sauce: Heat butter in a heavy saucepan over Low heat; add in flour and stir till smooth. Cook 1 minute, stirring constantly. Gradually add in lowfat milk; cook over Medium heat, stirring constantly, till thickened and bubbly. Add in cheese, salt and pepper, stirring till cheese is melted.
  4. Yield: about 3/4cup.
