Egg SALAD Sandwich

Ingredients

  • 6 eggs, hard boiled
  • 1/8 t pepper
  • 1/4 t salt
  • 1/4 cup Greek Yogurt
  • 1 t yellow mustard
  • 1/4 cup chopped chives
  • 2 cups fresh spinach, chopped
  • 32 cherry tomatoes, halved
  • 1 t lemon juice or vinegar
  • 1 T olive oil
  • salt & pepper to taste
  • 2 slices soft whole wheat bread

Directions

  1. In a small bowl, combine yogurt, mustard, salt and pepper.
  2. Chop eggs into the yogurt mixture and mix well.
  3. Stir in chives. Cover and chill 30 minutes.
  4. Chop spinach and halve tomatoes. Squeeze lemon juice on top of spinach. Sprinkle with salt and pepper. Drizzle with olive oil. Spread egg mixture on four slices of whole wheat bread. Dot with tomato halves. Top each of the four pieces with 1/4 spinach mix then the second piece of bread. Cut on the diagonal and serve immediately.
