    Vegetable Egg Noodles Recipe is a famous recipe from the land of Kerala (India).

    Ingredients

    • Plain Noodles - 2 cups
    • Baby peas - ½ cup
    • Tomato Juice - 2 tsp
    • Eggs - 2 nos
    • Garam Masala - 1 tsp
    • Chili Powder - 2 tsp
    • Pepper Powder - 1 tsp
    • Onions - 2 nos
    • Ginger Garlic Paste - 1 tsp
    • Oil - 1 tsp
    • Salt - to taste

    Directions

    1. Hard boil the eggs, peel them and cut eggs into thin long slices.
    2. Boil the water in a vessel and add noodles in boiling water. Cook the noodles in this boiling water until they are soft done. Make sure that they should not be overdone and should not be sticky.
    3. When the noodles are done, take them out of water. Drain the all the water with the help of sieve.
    4. Now, heat the oil in a heavy bottom big frying pan (griddle). When the oil is hot, add the onions and fry until they are light brown.
    5. When the onions are light brown, add the ginger garlic paste, chili powder, garam masala, baby peas and pepper powder to it and fry for 1 more minute. Keep stirring frequently.
    6. Now, add the sliced eggs to it and mix properly.
    7. Now pour the tomato juice to it and cook for a minute. Add salt and mix well.
    8. Now, add noodles and mix properly, cook for a minute. keep stirring frequently.
    9. Your egg noodles are ready, serve hot with tomato sauce or chili sauce.
