  • Edna's Sweet Potato Pecan Pie

    Ingredients

    • 1 c. sweet potatoes, cooked & mashed
    • 1/4 c. light brown sugar
    • 2 T granulated sugar
    • 1 egg, beaten till frothy
    • 1 T canned lowfat milk
    • 1 T butter, softened
    • 1 T vanilla
    • 1/4 teaspoon salt
    • 1/4 teaspoon cinnamon
    • 1/8 teaspoon allspice
    • 1/8 teaspoon nutmeg

    Directions

    1. Put together ingredients into bowl. beat till batter is smooth. Set aside. 3/4 c. dark corn syrup 3 sm. large eggs 1 1/2 T butter, melted 2 teaspoon vanilla Pinch of salt Pinch of cinnamon 3/4 c. pecan piecesCombine all ingredients except pecans in mixing bowl. Mix thoroughly, approximately one minute. Stir in pecans. Spoon sweet potato filling into unbaked pie shell. Pour the pecan syrup on top. bake on 325 degrees till knife inserted comes out clean, about 1 3/4 hrs. Store at room temperature for 24 hrs, then chill.
