Easy Tropical Carrot Cake with Coconut Cream Cheese Frosting

- 1 box carrot cake mix (I like Duncan Hines)
- 1 cup pineapple juice
- 1 small can crushed pineapple
- 3 eggs, beaten
- 1/3 cup toasted walnuts
- 1/2 cup melted butter
- 1/2 cup toasted coconut flakes
- Frosting:
- 1 1/2 sticks soft butter
- 3 cups powdered sugar
- tsp. vanilla
- 16 oz. cream cheese, room temp
- 2 cups toasted coconut flakes
- optional: toasted walnuts
- or
- 1 can cream cheese frosting
- 2 cups toasted coconut flakes
Directions
- Heat oven to 350 F.
- Grease and flour pan or pans of choice.
- Beat eggs and add other ingredients. Mix well.
- Add batter to pan (s).
- Bake according to box directions.
- Frosting:
- Using a hand mixer, combine vanilla, butter, cream cheese, then add sugar.
- Beat until smooth.
- Frost cake, then sprinkle on coconut
