Easy Tex-Mex Beef Casserole

Ingredients

  • 1 1/2 lb ground beef
  • 1 small onion, diced
  • 1 T olive or other oil
  • 1 tsp. garlic powder
  • 1 pkg taco seasoning
  • 1/2 C taco sauce or salsa
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 C sour cream or crema
  • 2 C shredded cheese ( I like extra sharp cheddar), divided
  • topping: 3/4 C Bisquick
  • 3 beaten eggs
  • 1 1/2 C milk
  • dash Tabasco
  • paprika
  • optional: cilantro
  • pinto or black beans

Directions

  1. Heat oven to 400 degrees.
  2. Cook beef, drain, then sauté onions in oil.
  3. Add garlic, taco seasoning, sauce, s&p, and half the cheese to bottom of a 9x13 baking pan. Spread sour cream on top.
  4. Mix the Bisquick with eggs, milk and tabasco. Pour on top of beef.
  5. Bake 25-30 minutes, or until Bisquick mix is golden brown.
  6. Remove from the oven and sprinkle the rest of the cheese on top, and sprinkle on paprika.
  7. Serve when top layer of cheese has melted.
