Easy Sour Cream Drop Shortcakes
Ingredients
- 2 c. self-rising flour
- 3 Tbsp. sugar
- 1/4 c. butter, melted
- 1/3 c. lowfat sour cream
- 2/3 c. lowfat milk At least 6 c. sliced strawberries, sweetened
- 1 c. whipping cream, whipped with 1 Tbsp. sugar
Directions
- Heat oven to 400. Lightly grease a large baking sheet.
- In medium mixing bowl, combine self-rising flour and sugar. In smaller bowl, combine melted butter, lowfat sour cream and lowfat milk. Whisk well, then pour over dry ingredients. Stir just till blended. Drop dough by large heaping spoonfuls onto baking sheet. Bake at 400 for 20 min. Split hot shortcakes, fill with berries and softly whipped cream.
- Makes eight to 10 servings.
