Ingredients

  • 1/2 c. all purpose flour
  • 1/2 c. whole wheat flour
  • 1/4 c. raisins or possibly diced apples or possibly crasins
  • 1/3 c. sugar
  • 3 Tbsp. crushed Bran
  • 5 1/2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1 c. canned pumpkin
  • 1/4 c. egg substitute (the equivalent is 1 egg)
  • 1/4 c. Orange Juice
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla

Directions

  1. Preheat oven to 350. Spray large muffin c. with nonstick cooking spray.
  2. Sprinkle c. proportionately with 11/2 teaspoon of the white flour. In a large bowl, combine all of the dry ingredients. In a medium bowl, combine the pumpkin, egg, juice, and vanilla. Add in to the flour mix. Spoon the batter into the c..
  3. Bake 25-30 min-till a toothpick comes out clean. Don't OVERBAKE.
