Easy Potato Gnocchi
Ingredients
- 4 large or 5 average potatoes
- 2 egg yolks
- 1/2 cup of grated Parmesan cheese
- 1 and 1/4 cups of flour
- 2 teaspoons salt
Directions
- Bake potatoes.
- When they have cooled enough to handle peel them and mash.
- Add remaining ingredients.
- Knead with your hands until it is well mixed.
- Dough should not be sticky or feel wet
- If it is, add a little more flour
- On a floured surface roll portions of the dough out into 1/2 inch rope.
- Cut pieces of the rope at 1/2 inch lengths.
- Boil about two minutes.
- Makes about 1 1/2 pounds
