Ingredients

  • 1 lb lentils
  • 2 c. vegetable stock
  • 2 Tbsp. coriander seeds
  • 2 Tbsp. cumin seeds
  • 1 tsp dry oregano
  • 1 tsp dry basil
  • 2 x bay leaves
  • 3 sm red potatoes - (to 4) diced
  • 1 lb fresh spinach thoroughly rinsed, and minced
  • 3 c. peeled diced butternut squash
  • 1 Tbsp. extra virgin olive oil
  • 1 lrg onion minced
  • 1 x celery stalk minced
  • 1 x carrot peeled, sliced thin
  • 4 x garlic cloves crushed Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Place all the ingredients in a large pot and bring to a boil. Lower the heat to a simmer and cook, covered, about 45 to 50 min. Remove the bay leaves before serving.
  2. This recipe yields 3 to 4 servings.
