  • Easy Lemon Squares

    Ingredients

    • 1/4 c. Granulated sugar
    • 3 Tbsp. Butter or possibly margarine, softened
    • 1 c. All-purpose flour
    • 3 lrg Large eggs
    • 3/4 c. Granulated sugar
    • 2 tsp Grated lemon rind
    • 1/3 c. Fresh lemon juice
    • 3 Tbsp. All-purpose flour
    • 1/2 tsp Baking pwdr
    • 1/8 tsp Salt
    • 2 tsp Powdered sugar

    Directions

    1. 1. Preheat oven to 350.
    2. 2. To prepare the crust, beat 1/4 c. granulated sugar and the butter or possibly margarine at medium speed of a mixer till creamy. Lightly spoon 1 c. flour into a dry measuring c.; level with a knife. Gradually add in 1 c. flour to sugar mix, beating at low speed till mix resembles fine crumbs. Gently press mix into bottom of an 8-inch square baking pan.
    3. Bake at 350 for 15 min; cold on a wire rack.
    4. 3. To prepare topping, beat Large eggs at medium speed till foamy. Add in 3/4 c. granulated sugar and next 5 ingredients (3/4 c. granulated sugar through salt), and beat till well-blended. Pour mix over partially baked crust. Bake at 350 for 20 to 25 min or possibly till set. Cold on wire rack.
    5. Sift powdered sugar proportionately over top.
    6. Yield: 16 servings
    7. NOTES : Took about 2 lemons to get the full measure of juice, but with oodles of zest left over.
