Easy Great Northern Beans
The easy way to cook great northern beans. Ingredients
- 1 lb. dried Great Northern beans
- 8 cups water
- 2 tbsp. olive oil
- 1 large head of garlic, unpeeled, with the top ½ of the head cut off to expose cloves
- 1 large sprig fresh sage or 1 tsp. dried sage
- ¼ tsp. ground black pepper
- 1 tsp. salt (kosher salt if you have it)
Directions
- Place dried beans in a large bowl and cover with cold water and let soak overnight.
- Drain beans and place in a large, heavy pot. Add 8 cups water, olive oil, garlic, sage, and peppercorns. Bring to simmer over medium-high heat; reduce heat to medium-low and simmer uncovered 1 ½ hours, stirring occasionally.
- Add salt and continue to simmer until beans are tender, adding more water if needed to keep beans covered, about 30 minutes longer.
- Cool beans in liquid for 1 hour. Drain beans, reserving ½ to 1 cup liquid, discarding garlic and sage (if using fresh sage).
