  • Easy Great Northern Beans

    The easy way to cook great northern beans.

    Ingredients

    • 1 lb. dried Great Northern beans
    • 8 cups water
    • 2 tbsp. olive oil
    • 1 large head of garlic, unpeeled, with the top ½ of the head cut off to expose cloves
    • 1 large sprig fresh sage or 1 tsp. dried sage
    • ¼ tsp. ground black pepper
    • 1 tsp. salt (kosher salt if you have it)

    Directions

    1. Place dried beans in a large bowl and cover with cold water and let soak overnight.
    2. Drain beans and place in a large, heavy pot. Add 8 cups water, olive oil, garlic, sage, and peppercorns. Bring to simmer over medium-high heat; reduce heat to medium-low and simmer uncovered 1 ½ hours, stirring occasionally.
    3. Add salt and continue to simmer until beans are tender, adding more water if needed to keep beans covered, about 30 minutes longer.
    4. Cool beans in liquid for 1 hour. Drain beans, reserving ½ to 1 cup liquid, discarding garlic and sage (if using fresh sage).
