It’s been a stressful year, with a really stressful fall and really, really stressful week (so far). I could show peaceful, soothing photos but I have the feeling they would be glanced at and ignored as people click back to the stress-inducing stuff. I’m equally certain that no one is looking for recipes that take actual concentration to make. The world is like a train wreck at the moment: no one wants to look but simply can’t help it. So I give you simple food. Everyone roasts the winter squashes and that is an easy way to prepare them but sometimes I just want to toss them into a skillet and get them done quickly.
