    Easy Chicken Stew is a delicious recipe for a fall or winter stew that is cooked on the stovetop. It uses fall vegetables and apples. Ingredients include: Chicken, parsnips, carrots, onion and apples. It is well-seasoned and ready to serve in less than an hour.     Ingredients

    • 5 tsp extra-virgin olive oil, divided
    • (1 lb) chicken tenders, cut in bite-size pieces
    • 1 large onion, chopped
    • 4 medium-size parsnips, peeled, chopped
    • 2 medium-size carrots, peeled, chopped
    • 1/2 tsp dried rosemary
    • 1/2 tsp salt
    • 1/4 tsp freshly ground black pepper
    • 4 cups low-sodium chicken broth
    • 2 Granny Smith apples, peeled, chopped
    • 2 tsp cider vinegar

    Directions

    1. Heat 2 teaspoons of the olive oil in a Dutch oven over medium heat. Add in the chicken and cook, stirring occasionally, until just cooked through, (3 to 5 minutes). Transfer to a plate and set aside.
    2. Add the remaining 3 teaspoons olive oil to the pot. Add in onion, parsnips, carrots, rosemary, salt and pepper. Cook, stirring often, until vegetables begin to soften, (3 to 5 minutes).
    3. Add the broth and apples to the pot. Bring to a simmer over high heat. Reduce heat to maintain a simmer and cook, stirring often, until the vegetables are tender, (8 to 10 minutes).
    4. Return the chicken to the pot and stir in the vinegar.
