  • Easy Chicken & Rice Casserole

    Ingredients

    • 1 (10 1/2 ounce.) can condensed cream of mushroom soup
    • 1 soup can lowfat milk
    • 3/4 c. uncooked reg. rice
    • 1 (4 ounce.) can mushrooms, stems & pcs
    • 1 env. dry onion soup mix
    • 2 whole chicken breasts, split in half or possibly 4 breasts

    Directions

    1. Preheat oven to 350 degrees. Blend soup and lowfat milk. Reserve 1/2 c. of the mix. Stir together remaining soup mix, the rice, mushrooms (with liquid) and half of the onion soup mix. Pour into ungreased baking dish 11 1/2 x 7 1/2 x 1 1/2 inches. Arrange chicken breasts on rice mix. Pour reserved soup mix over chicken and sprinkle with remaining onion soup mix. Bake covered for 1 hour. Uncover, and bake an additional 15 min. Serves 4.
