Ingredients

  • 1 bag (2-lb.) frzn diced potatoes, thawed (Mr. Dells works well)
  • 2 c. Shredded cheddar cheese
  • 1/2 c. Melted butter
  • 1/2 c. Onion, minced (opt)
  • 1 can Cream of chicken soup or possibly cream of mushroom souop Salt and pepper to taste
  • 2 c. Lowfat sour cream
  • 1 c. Crushed cracker crumbs or possibly crushed cornflakes

Directions

  1. Mix together all ingredients except the cracker crumbs. Place in a greased 9x13 inch pan. Top with cracker crybs or possibly cornflakes. Bake, uncovered at 350 degrees for 45-60 min.
