• Easy Cheesy Macaroni And Cheese

    • 1 1/2 tsp Salt
    • 4 c. Water
    • 1 1/2 c. Uncooked macaroni
    • 1/2 c. Shredded cheddar cheese
    • 1/2 c. Shredded process cheese or possibly Cheese Whiz
    • 2 x Large eggs, beaten
    • 2 c. Lowfat milk
    • 1 tsp Finely minced onion (optional)


    1. Add in 1 tsp. salt to water; bring to a boil. Add in macaroni. Cook uncovered, stirring occasionally, till almost tender; about 6 min.
    2. Drain. Preheat oven to 350 F. Grease 1 1/2 qt casserole. Cover bottom of casserole with half the macaroni .Combine cheeses; sprinkle half of mix over macaroni in casserole, repeat layers. Combine Large eggs with lowfat milk, onions, 1/2 teaspoon salt and pepper. Pour over macaroni and cheese or possibly corn flake crumbs. Set casserole in a pas of warm water. Bake 45 min to 1 hour, till browned and almost set in center. Let cold 10 min before serving to allow mix to set.
    3. Yields 6 servings
