  • Easy Cheesy Broccoli Potatoes

    Ingredients

    • 1 lrg Baking Potatoes
    • 2 Tbsp. Nonfat Plain Yogurt
    • 1/8 tsp Seasoning Such As Mrs. Dash
    • 1 Tbsp. Molly Mcbutter Cheese Flavored, Or possibly Cheddar Cheese Pwdr *Note
    • 2 Tbsp. Frzn Minced Broccoli
    • 1/4 tsp Paprika

    Directions

    1. *Note - The cheese pwdr is the pwdr from macaroni and cheese boxes or possibly use Kraft Grated American Cheese Food
    2. I was looking for a lowfat way to satisfy my craving for broccoli cheese potatoes and came up with this.
    3. Preheat oven to 425 degrees F. Scrub potato. Pierce and microwave 5 minuteson med high. Transfer to toaster oven or possibly oven. Bake 45 min or possibly till potato is very well done and skin is crisp.
    4. Slice top off of potato to expose baked potato. Mash with fork. Add in yogurt and seasoning and mix well. Press frzn broccoli into the potato, making sure the potato covers it. Make a long slit (like a valley) into the mashedpotato and sprinkle in the cheese. Smooth it over with a spoon. Sprinkle with paprika. (Sprinkle seasoning on the potato skin cut from the top and bake which, too.)
    5. Bake 15 min longer till warm. Serve and enjoy.
    6. Serves one, but you can do this with as many potatoes as you want.
    7. Note: You only need about 1 tsp of the cheese food. The can of Kraft American Cheese Food (that looks just like the pwdr from the macaroni and cheese package - but at about 1/3 the price this way) says 25 calories
