    • 3/4 c. graham cracker crumbs
    • 1/8 c. melted butter
    • 1 (8 ounce.) lite cream cheese, softened
    • 1/2 c. granulated sugar
    • 1 tbsp. plus 1 teaspoon lemon juice
    • 1/4 teaspoon vanilla extract or possibly 1/4 teaspoon lemon extract
    • Dash of salt
    • 2 Large eggs
    • 1 c. lite lowfat sour cream
    • 2 tbsp. granulated sugar
    • 1/4 teaspoon vanilla or possibly lemon extract


    1. Combine graham crackers and butter in 9 inch pie plate for crust. Don't bake. Combine and blend well cream cheese, sugar, lemon juice, extract and salt. Add in 1 egg at a time; mix well after each.
    2. Pour all ingredients into crumb crust. Bake at 325 preheated oven for 25-30 min till center is set.
    3. Combine and stir lowfat sour cream, sugar and extract. Spread over baked cheesecake. Return to oven. Bake 10 min. Cold. Chill. Top with graham cracker crumbs or possibly favorite fruit, if you like. Serves 6.
