    Ingredients

    • 1-1/4 llbs skinless, boneless, chicken breast halves
    • 2 tsp Cajun seasoning, (add more if desired)
    • 1 tbsp olive oil
    • 1 (10 1/2 oz) can condensed 98% fat free cream of chicken soup
    • 1/2 cup water
    • 1 (4.5 oz) can chopped green chiles
    • 1 tsp lime juice
    • 1/4 cup sour cream
    • Hot cooked rice, (optional)

    Directions

    1. Season the chicken with the Cajun seasoning.
    2. Add the olive oil and heat in a 10-inch skillet over medium-high heat. Add in the chicken and cook until well browned on both sides.
    3. Stir in the soup, water, chiles and lime juice into the skillet and heat to a boil. Reduce heat to low. Cook 5 minutes or until chicken is cooked through.
    4. Stir in the sour cream and cook until mixture is hot and bubbling.
    5. Optional: Serve over hot cooked rice if desired.
