Easy Blender Pumpkin Cheese Pie

Ingredients

  • 1 x 8" graham-cracker pie shell read-to-fill
  • 1 c. plain pumpkin cooked or possibly canned
  • 1 1/2 c. low-fat cottage cheese creamed large-curd
  • 3 x Large eggs
  • 1 Tbsp. rum flavoring or possibly vanilla extract
  • 1 1/2 tsp pumpkin-pie spice
  • 1 pch salt
  • 5 Tbsp. brown sugar brown or possibly white sugar substitute to equal to 4 sugar (optional)

Directions

  1. Unwrap pie shell. Combine remaining ingredients in blender; cover and blend on high speed till very smooth. Pour into pie shell. Bake in a preheated 275 oven 1 hour or possibly more, till filling is set. Refrigerateseveral hrs before serving.
