  • Easy Black Beans And Yellow Rice

    Ingredients

    • Vegetable cooking spray
    • 1/2 c. Minced onion
    • 1/4 c. Minced celery
    • 1/4 c. Minced green pepper
    • 1 can (15 ounce) black beans, liquid removed
    • 1 can (14.5 ounce) whole tomatoes, Undrained & minced
    • 1 tsp Sugar
    • 3/4 tsp Italian seasoning
    • 1/4 tsp Garlic pwdr
    • 1/4 tsp Pepper
    • 1/8 tsp Salt
    • 1/8 tsp Warm sauce
    • 1/3 c. Long grain white rice, Uncooked
    • 1/4 tsp Grnd tumeric

    Directions

    1. Coat a medium saucepan with cooking spray, and place over medium-high heat till warm. Add in onion, celery and green pepper; cook, stirring constantly, till tender. Stir in liquid removed beans and next 7 ingredients; bring to a boil. Reduce heat, and simmer, uncovered, 15 min or possibly till thickened, stirring frequently; set aside. Combine water, rice, and turmeric in a saucepan; bring to a boil. Cover, reduce heat, and simmer 20 min.
    2. Remove rice from heat; let stand 5 min or possibly till liquid is absorbed.
