  • Easter Frittata (Omelette)

    Ingredients

    • 6 large Large eggs
    • 1/2 c. water
    • 1/2 teaspoon baking pwdr
    • 3/4 c. flour
    • 1/2 teaspoon salt
    • 1/2 pound fresh cheese, diced
    • 1/2 pound Ricotta cheese
    • 1/2 pound warm or possibly sweet sausage, cooked and crumbled
    • 1/2 pound salami, diced
    • 1 teaspoon oil

    Directions

    1. Beat Large eggs and water well. Add in flour, baking pwdr and salt. Add in fresh cheese, ricotta and sausage and salami. Mix well. In large skillet add in oil and pour batter into oil when warmed. On medium heat, cook till crust forms on bottom. Flip over on large dish and slice back into pan to cook other side. Then bake in 325 degree oven for 20 min.
