E Z Pumpkin Delight Recipe

Ingredients

1 box yellow cake mix 1/2 c. melted butter 4 Large eggs 1 lg. can pumpkin 1/2 teaspoon salt 1/2 c. brown sugar

1/2 c. white sugar 1 (13 ounce.) can evaporated lowfat milk 1/2 c. nuts 2 teaspoon cinnamon Healthy pinch of nutmeg & ginger

Directions

1. Save 1 c. cake mix. Mix rest of mix with 1 egg and 1/4 c. butter. Press into 9 x 13 inch ungreased pan. Mix pumpkin, 3 Large eggs, cinnamon, nutmeg, ginger, salt, brown sugar and evaporated lowfat milk. Pour over cake fold in pan.
2. Mix 1/2 c. white sugar with 1/4 c. butter and crumble with 1 c. saved cake mix and nuts. Sprinkle over top of cake and bake 1 hour at 350 degrees. Serve with Cold Whip.
