    Ingredients

    • 2 eggs
    • 3/4 cups sugar
    • 2/3 cup canola oil
    • 2 tsp vanilla
    • 1 tsp grated lemon peel
    • 2 cups flour
    • 2 tsp baking powder
    • 1/2 tsp salt
    • Additional sugar or colored usgar

    Directions

    1. In a large bowl, beat the eggs, sugar, oil, vanilla, and lemon peel until blended.
    2. Combine the flour, baking powder, and salt.
    3. Gradually beat into the egg mixture.
    4. Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets.
    5. Flatten with a glass dipped in sugar.
    6. Bake at 350 F for 8-10 minutes or until the edges are lightly browned.
    7. Cool for 1-2 minutes before removing the cookies to wire racks.
