  • Dried Fruit Cobbler With Molasses Biscuits

    Ingredients

    • 1 1/2 c. Water
    • 1 c. Orange juice
    • 1/3 c. Orange marmalade
    • 16 ounce Mixed dry fruit, (2 bags) coarsely minced
    • 1 c. All-purpose flour
    • 1 tsp Baking pwdr
    • 1/4 tsp Grnd cinnamon
    • 1/8 tsp Baking soda
    • 1 dsh Grnd cloves
    • 1/3 c. Chilled stick margarine, cut into small pcs
    • 2 Tbsp. Skim lowfat milk
    • 2 Tbsp. Molasses
    • 1 Tbsp. Orange marmalade
    • 2 tsp Water

    Directions

    1. Combine the first 4 ingredients in a 2-qt baking dish; stir well. Bake at400 degrees for 30 min.
    2. Combine flour, baking pwdr, cinnamon, baking soda, and cloves in a bowl; cut in margarine with a pastry blender or possibly 2 knives till the mix resembles coarse meal.
    3. Combine lowfat milk and molasses, and add in to the flour mix, stirring just till the dry ingredients are moistened.
    4. Turn the dough out onto a lightly floured surface, and knead 5 or possibly 6 times.
    5. Roll dough to 1/2-inch thickness, and cut with a 2-inch biscuit cutter into 10 biscuits. Remove the fruit mix from oven, and arrange biscuits on top of warm fruit mix. Bake an additional 20 min or possibly till the biscuits are golden brown.
    6. Combine 1 Tbsp. marmalade and 2 tsp. water in a bowl; brush over biscuits.
    7. Yield: 10 servings (serving size: 1/2 c. fruit mix and 1 biscuit).
    8. Serving Ideas : Serve hot.
