  • Dried Cherry Scones

    Ingredients

    • 2 c. All-purpose flour
    • 7 Tbsp. Sugar
    • 1 1/2 tsp Baking pwdr
    • 1/2 tsp Baking soda
    • 1/4 tsp Salt
    • 1/4 c. Chilled margarine Cut into small pcs
    • 1/2 c. Dry tart cherries
    • 1/2 c. Nonfat buttermilk
    • 1 tsp Vanilla extract
    • 1/4 tsp Almond extract
    • 1 x Egg, lightly beaten Vegetable cooking spray
    • 1 x Egg white, lightly beaten
    • 1 Tbsp. Sugar

    Directions

    1. Combine first 5 ingredients in a bowl; cut in margarine with a pastry blend er till mix resembles coarse meal. Add in cherries; toss well.
    2. Combine buttermilk and next 3 ingredients; add in to dry ingredients, stirring just till dry ingredients are moistened (dough will be sticky).
    3. Turn dough out onto a lightly floured surface, and with floured hands, knea d 4 to 5 times. Pat the dough into an 8-inch circle on a baking sheet coat ed with cooking spray.
    4. Cut dough into 12 wedges, cutting into but not through dough. Brush with eg g white, and sprinkle with 1 Tbsp. sugar.
    5. Bake at 400 degrees for 18 min or possibly till golden brown.
    6. Yield: 1 dozen (servingsize: 1 scone).
    7. Serving Ideas : Serve hot.
