Ingredients

  • 1 pkt Stouffer's creamed spinach - (9 ounce)
  • 12 x hard-cooked Large eggs
  • 1/3 c. instant potato flakes
  • 1/2 c. mayonnaise
  • 1 Tbsp. Dijon mustard
  • 5 slc bacon cooked, crumbled
  • 3 x green onions chopped Paprika (optional)

Directions

  1. Thaw creamed spinach in microwave at Medium (50% power) 5 to 6 min.
  2. Peel Large eggs; cut in half lengthwise. Carefully remove yolks; mash yolks and potato flakes with a fork. Stir in creamed spinach, mayonnaise, and next 3 ingredients.
  3. Stuff egg whites generously with yolk mix. Sprinkle with paprika, if you like. Chill, if you like
  4. This recipe yields 6 to 8 servings.
