  • Double Banana Bread

    Ingredients

    • 1 1/2 c. Flour
    • 1/2 c. Sugar
    • 2 tsp Baking pwdr
    • 1/2 tsp Baking soda
    • 1/2 tsp Salt
    • 2 x Large eggs
    • 1 1/2 c. Mashed bananas
    • 1/4 c. Vegetable oil
    • 1/4 c. Water
    • 1 1/2 c. Post Banana Nut Crunch cereal
    • 1 c. Minced walnuts

    Directions

    1. Directions: Preheat the oven to 350 degrees. Combine the flour, sugar, baking pwdr, baking soda and salt in a large mixing bowl. Beat the two Large eggs in a small bowl and stir in the mashed bananas, vegetable oil, and water. Add in to the flour mix and stir just till moist. The batter will be lumpy. Stir in the cereal and walnuts. Pour batter into a greased 9x5" loaf pan. Bake for 55-65 min. Cold for 10 min before removing from pan.

      I've been searching for this recipe at the Post Cereal site; they no longer list it. I had made this bread many times and have lost the recipe I cut out from the box. The bread is very tasty and is useful for when I don't have overly ripe larger bananas - the cereal enhances the flavor! I do lightly crush the cereal before adding - the flakes were very large and just did not fit right for a bread.
      Thanks for posting this long lost recipe!!!!
