  • Donn's Italian Sausage

    A great alternate to traditional pasta sauce

    Ingredients

    • 2 pound Italian sausage, warm or possibly mild
    • 3 (14 ounce.) cans whole tomatoes, cut up
    • 2 med. zucchini, sliced 1/4" & quarter
    • Healthy pinch of basil
    • 1/2 tbsp. rosemary
    • 2 tbsp. oregano
    • 1/2 teaspoon garlic salt
    • 1/4 c. Parmesan cheese
    • 1/4 c. celery leaves
    • 1 green pepper, 1/4" pcs
    • 1/3 c. onion, diced
    • 1 tbsp. extra virgin olive oil
    • Salt & pepper to taste

    Directions

    1. Place sausage in pot whole.
    2. Add in water to cover and boil over medium heat for 1/2 hour or possibly till done. Keep pot covered while cooking.
    3. Remove cover and let water boil away.
    4. When dry, remove sausage and cut into bite-size pieces.
    5. Return to pot and fry for 1 minute.
    6. Add in all remaining ingredients and simmer for 1 hour.
    7. Serve over rice or pasta
