Ingredients

  • 1 pound grnd beef
  • 1/2 med. onion (minced)
  • 1 teaspoon dry mint leaves
  • 1 tbsp. uncooked rice
  • Salt and pepper
  • 1 1/2 c. beef stock
  • 1 c. water
  • 2 egg yolks
  • Juice of 1 lemon

Directions

  1. Mix beef, onion, mint, parsley and rice. Season with salt and pepper and add in 1/4 c. beef stock. Mix well and form into walnut size balls. Bring the remaining stock to boil and drop meatballs into it. Simmer for 45 min. Beat egg yolks, add in lemon juice. Slowly add in some of the warm stock to yolks while beating. Stir egg yolk mix into remaining stock, cover, let stand 5 min off heat. Makes 4 servings.
