Djaj Mqalli Chicken With Lemons And Olives

- 1 x Chicken liver -- optional Lemon juice
- 1 x Up
- 1 x Pickled lemon -- cut in Strips Diced onion Ginger Saffron Garlic -- chopped Salt Oil Hot water Chicken -- cut-up Cilantro -- chopped Kalamata olives
Directions
- Mix onion, ginger, saffron, garlic, salt, oil and water in skillet. Stir till creamy. Bring to boil. Add in chicken pcs, cilantro and liver. Cover skillet and cook over medium-high heat 45 to 50 min. When liver is done, remove from skillet and mash, then set aside. Check dish as it cooks, and add in warm water as needed.
- When chicken is done, remove pcs to serving dish. Skim fat from cooking liquid and reduce; if necessary. Add in liver. Taste and add in lemon juice, if you like. Pour contents of pan over chicken. Garnish with olives and lemon.
