  • Dieter's Delight Crustless Crab Quiche

    Ingredients

    • 8 ounce. crabmeat
    • 4 ounce. Swiss cheese, shredded
    • 1 teaspoon Old Bay seasoning
    • 4 Large eggs or possibly Egg Beaters to equal 4 Large eggs
    • 1 c. evaporated skimmed lowfat milk
    • 1/2 teaspoon salt
    • 1/2 teaspoon powdered mustard
    • 1/8 teaspoon pepper
    • Dash paprika

    Directions

    1. Preheat oven to 400 degrees. Spray 8 inch glass pie plate with nonstick cooking spray; set aside.
    2. In medium bowl, combine crabmeat, cheese and Old Bay; using back of a spoon, press crabmeat mix over bottom and up sides of sprayed pie plate.
    3. Using a wire whisk, in medium mixing bowl beat together Large eggs, lowfat milk, salt, mustard and pepper; pour over crabmeat mix. Sprinkle with paprika and bake till set, about 30 min. Remove from oven and let stand for 5 min before serving.
