Diet Pineapple Cheesecake
Ingredients
- 1 pound cottage cheese
- 1 egg
- 8 packets of "Sweet and Low"
- 1 lb., 4 ounce. can crushed pineapple in it's own juice
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
- 1 env. Knox gelatin
- 3/4 c. juice from liquid removed pineapple
Directions
- In blender mix all ingredients except cottage cheese and pineapple. Blend well. Add in cottage cheese slowly and continue till real smooth. In 8 inch pan make crust of well liquid removed pineapple. Pat down and then pour in cheese mix. You may add in and sprinkle cinnamon over top. Bake at 325 degrees for 20 min. Don't overbake - it will get too dry.
