Diab Basmati And Wild Rice Medley
Ingredients
- 1 c. uncooked basmati or possibly other long-grain rice
- 1/2 c. uncooked wild rice butter-flavored cooking spray
- 1 Tbsp. reduced-fat margarine
- 1 c. frzn baby onions defrosted under running cool water and liquid removed
- 1 c. minced celery with some leaves
- 1 c. minced red bell pepper
- 2 Tbsp. minced parsley
- 1/2 Tbsp. dry rubbed sage
- 1 tsp salt optional
- 1/2 tsp crushed dry thyme
Directions
- 1. Cook rices according to package directions; drain, set aside, and keep hot.
- 2. Lightly spray a large nonstick skillet with cooking spray. Add in margarine and heat over medium heat. Add in onions, celery, and bell pepper. Saute/fry, stirring often, till vegetables are tender. Stir in parsley, sage, salt (if using), and thyme.
- 3. Add in the cooked rices and continue to cook, stirring gently, till warm. Transfer mix to a large serving bowl. Serve at once.
