  • Deviled Egg Variations with Foolproof Hardboiled Eggs Instructions

    Stop turning failed hardboiled eggs into egg salad, although egg salad can be wonderful. There are several ways to hardboil eggs, but the method suggested below works well. (What causes the green tint to the edge of the yolks is boiling the eggs too long.) Note: I usually add an extra egg to boil, so I can overstuff the 12 egg halves, using the extra yolk. Included are some deviled egg fillings: Tex-Mex Bacon Chipotle Granny's Old-fashioned Dijonnaise Shrimp Remoulade Smoked Oyster with Curry

    Ingredients

    • 7 extra large eggs
    • Fillings:
    • Tex-Mex Bacon Chipotle:
    • 7 mashed egg yolks
    • 2 tbs. mayonnaise
    • 1/2 tbs. sour cream
    • 1 tsp. chipotle in adobo sauce, or Chipotle Salsa
    • few drops vinegar
    • 1/8 tsp. salt
    • 1/8 tsp. pepper
    • garnish: 2 tbs. bacon cumbles
    • Granny's:
    • 7 mashed egg yolks
    • 2 tbs. mayonnaise (can add more)
    • 1 tbs. sour cream
    • 1 tsp. yellow mustard
    • 1 tsp. minced scallions
    • 1/8 tsp. vinegar
    • 1 tsp. sweet pickle relish
    • 2 drops Tabasco
    • 2 drops Worcestershire
    • garnish: 1/2 tsp. minced parsley
    • Dijonnaise:
    • 7 mashed egg yolks
    • 2 tbs. mayonnaise
    • 1/2 tbs. sour cream
    • 1 tsp. Dijon Mustard
    • 1 minced scallion
    • 1 tbs. cooked bacon crumbles
    • 1/2 tsp. vinegar
    • pinch sugar
    • pinch each salt and pepper
    • ganish: chopped fresh chives
    • Shrimp Remoulade:
    • 1/3 cup mayonnaise
    • 1 tbs. minced scallions
    • 1 tsp. minced parsley
    • 1/2 tbs. creole mustard
    • 1/2 tsp. garlic powder
    • 1/4 tsp. fresh lemon juice
    • 1 small can shrimp, drained, minced
    • pinch salt and pepper
    • Smoked Oyster with Curry:
    • To Granny's recipe, omit relish, add 1/2 tsp. curry powder and 3-4 minced smoked oysters.

    Directions

    1. Buy eggs 3-4 days in advance.
    2. Cover them in cold water by one inch.
    3. Bring to a boil, turn down heat to simmer eggs 4 minutes.
    4. Remove from heat. Cover. Let sit 10-12 minutes.
    5. Meanwhile, prepare a bowl of ice water.
    6. Plunge eggs into cold water. Wait 5 minutes.
    7. Tap each egg on a counter, cracking the shell all over, roll a few times, and begin peeling from the large end.
    8. Cut in half, remove yolk. Put yolk in a small mixing bowl, mash.
    9. Egg Filling Directions:
    10. Mash egg yolks well.
    11. Mix with mayonnaise and other ingredients.
    12. Place in a plastic baggie and cut a small hole on the bottom of one side.
    13. Fill the egg halves.
    14. Garnish.
