    Delicious Brown Homestyle Sausage Gravy

    Yet another southern favorite, sausage gravy. With the milk base alone, the pale color can be a little off-putting. My family prefers the 'brown' version. Nothing warms the heart, soul, and gracious tummy like hot coffee, biscuits and gravy. Savory warm spices echo through this beautiful fragrant dish. Reminiscent of the good ole days, this recipe is very satisfying and sumptuous. Watch out eggs, here comes the main event!!

    Ingredients

    • 1 lb. home-made country sausage*
    • 1 tsp. olive oil
    • 1 1/2 c. low fat milk
    • 2 c. low sodium beef broth
    • 2 tbsp. flour
    • 1/2 tsp. ground thyme
    • 1/4 tsp. paprika
    • Kosher salt and pepper to taste

    Directions

    1. Bring a cast iron skillet up to medium high heat and add olive oil. Add sausage and break up with a potato masher or wooden spoon. Cook until no longer pink and there is some carmelization on the bits of sausage- about 5 minutes. Stir in flour, thyme and paprika and cook for 1 minute more. De-glaze pan with broth and add milk. Bring back up to a simmer over medium heat until desired thickness if reached. If too thick, simply add more broth or water. Season with kosher salt and pepper to taste. Serve with Big ole Southern Biscuits with Flax Seeds and eggs.
    2. *If you don't have access to country sausage, you may substitute with a good quality store-bought sausage or even ground turkey if you wish.

      Non porkers can substitute ground turkey or chicken, just add about 1 tbsp. of olive oil to the pan, so that the lean meat won't stick and it will brown more readily.
