Here is my Asian twist to my favorite celebrity chef Michael Symon's Fried Brussels Sprouts with Walnuts and Capers. I'm going on the record to say that these are the best brussels sprouts I've ever eaten! I can't explain how delicious they are. You just have to make them.

    Ingredients

    • 1 1/2 lbs brussels sprouts. cut in 1/4's
    • 2 green onion stalks, chopped
    • 1/2 bunch cilantro leaves, chopped
    • 1/3 cup cashews, chopped
    • For the sauce you will need:
    • 3 garlic cloves, minced
    • 1 tsp galangal, minced-you can substitute ginger
    • 1-2 lime kaffir leaves, finely chopped
    • 2-3 thai chili peppers, chopped
    • 1/4 cup soy sauce
    • 1/4 cup sherry wine vinegar
    • 3 Tbsp fish sauce
    • 2 tsp toasted sesame oil
    • 1 Tbsp honey

    Directions

    1. Heat oil to 350 degrees. Deep fry brussels sprouts in batches for a couple of minutes until golden brown. Add onions & cilantro to deep fryer the last minute with the last batch of brussels sprouts. Drain off oil. **be careful when frying, these babies pop**
    2. Meanwhile combine sauce ingredients together . Transfer brussels sprouts to a mixing bowl. Pour sauce over brussels sprouts and toss til evenly coated. Plate up and top with cashews. Adjust seasoning to taste.
