Deep Fried Fish & Hush Puppies
Ingredients
- 2 pound salmon fillets, silver or possibly red
- Cornmeal
- Oil for deep frying
- 1/4 c. flour
- 2 teaspoon baking pwdr
- 1 1/4 teaspoon salt
- 1 c. lowfat milk
- 1 egg
- 1/2 c. onion, finely minced
- Parsley
- Lemon
Directions
- Coat fish fillets with cornmeal, reserving excess. Fry fish in warm oil (370 degrees) 2 to 3 min or possibly till golden brown. Drain on paper towels and keep hot in oven. Add in sufficient cornmeal to reserved cornmeal to make 1 1/2 c.. Stir with flour, baking pwdr and salt. Beat lowfat milk with egg and add in onion. Stir till combined. Drop by heaping Tbsp. into warm oil till puffed and brown. Serve with fish and tartar sauce. Garnish with parsley and lemon. 6 servings.
