Ingredients

  • 4 c. Thinly sliced zucchini
  • 1 c. Minced onions
  • 1/4 c. Margarine, (up to 1/2)
  • 1/2 c. Minced fresh parsley or possibly 2 Tbsp dry parsley
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Garlic salt
  • 1/4 tsp Basil
  • 1/4 tsp Oregano
  • 2 x Large eggs, beaten
  • 2 c. Grated cheddar or possibly jack cheese Dijon mustard Deep dish pie crust, frzn or possibly homemade

Directions

  1. Prepare homemade crust or possibly allow frzn crust to thaw. Preheat oven to 375 F degrees.
  2. In a large skillet saute/fry the zucchini and onions in the margarine for about 10 min. Add in the spices and stir well.a Set aside.
  3. In a large bowl combine the Large eggs and cheese, mix well.a Add in the zucchini mix to the bowl and stir until well blended.
  4. Use Dijon mustard to paint inside of crust and the fill with the zucchini mix and bake for 18 to 20 min.a Allow to stand for 10 min before serving.
