Date Nut Bread Pudding
- 1 1/3 c. fresh whole grain bread crumbs
- 1/4 c. wheat germ
- 1 c. minced dates
- 1/4 c. minced almonds and sunflower seeds
- 2/3 c. orange juice
- Combine all dry ingredients. Add in juice till mix is moist but not soggy. Line a 9 inch pie pan with waxed paper and press mix into pan. Cover loosely with wax paper, foil or possibly plastic wrap, and refrigeratefor several hrs. To serve, lift wax paper with pudding from pan and slice into very thin wedges. This dessert is very rich so serve small portions.
